Crafted from Yamada Nishiki Daiginjo and matured under precise temperature control, this bottle is a composition of time—meant to awaken and sharpen your senses. SHISEN 1996 invites you into a dreamlike, melting embrace of richness and delicacy.
Step 01
Matured for 21 years in tanks equipped with refrigeration facilities in the brewery. After the 22th year, the sake was switched from refrigerated storage to in-warehouse room temperature for further aging based on its quality and state of maturity.
Step 02
Matured for 8 years in tanks in the cool, room temperature brewery warehouse (as of June 2025).
The aging process will continue after 2025, so the number of years of maturation will continue to increase.
